I teach graduate students how to do research and then write academic papers based on that research. I especially like the first half of your remarks because they reiterate so well what I say to my students. Like you, I have been a writer for ages. I, too, found that, even in fiction (which I only do during NaNoWriMo speed writing month of November), it helps to have at least some idea about where the story is going. Having said that, the works of fiction develop lives of their own and often go off in surprising directions. Nevertheless, I needed the rough order of an outline to get the show on the road.

Great suggestions. I use an online outlining tool called The Outliner of Giants. There’s a free subscription and a paid (I think it’s $10). Has been very handy.
